Польза чернослива для организма не подлежит сомнениям. Продукт рекомендуют регулярно употреблять здоровым людям, а также страдающим нарушениями пищеварения и сбоями артериального давления. Диетологи разрабатывают специальные схемы употребления сухофрукта в рамках оздоровительных программ, а также для коррекции веса. Чернослив – продукт переработки сливы сорта венгерка. Слива домашняя была завезена на территорию РФ из Азии. Плодовые деревья быстро стали популярными, а работа селекционеров получила направленность выведения холодоустойчивых сортов. Надо сказать, что она не была особенно успешной – Теплолюбивая кавказская слива распространена только в европейской части России, а также в некоторых дальневосточных регионах.

Характеристика сливы домашней

Популярность сливы домашней снижает ее свойство плодоносить только на седьмой-восьмой год вегетации растения. До этого на дереве полностью отсутствуют плоды. Высотой слива достигает около 6 м, но при условии удачного места посадки, с достаточным количеством света, влаги, а также при теплом климате. Морфологические признаки сливы следующие.

  • Ствол. Округлый, покрыт серовато-белой корой, густо испещренной трещинами и бороздами. Кора ветвей имеет красновато-бурый окрас, зачастую гладкая, практически глянцевая. Ветвится слива активно, ветви образуют разлогую крону яйцевидной формы.
  • Листья. Размещены на ветвях поочередно, имеют средней длины черешок, пильчатый или зубчатый край. Форма листовой пластины овальная, на поверхности хорошо просматривается перистое жилкование. Окрас верхней стороны – темно-зеленый, нижней – сизо-зеленый.
  • Цветки. Зачастую расположены на старых побегах по несколько штук. Цвет – бело-зеленый, венчик может быть простым или полумахровым. Цветение сопровождает распускание листвы. Слива домашняя источает приятный сладковатый аромат.
  • Плоды. Костянки овальной, круглой, вытянутой или сплющенной формы, с хорошо заметным швом на одном из боков. Имеют тонкую кожицу, покрытую сизым восковым налетом. Окрас от темно-красного до желтого, что зависит от сорта. Мякоть сочная, кисло-сладкая, иногда с терпковатыми нотами. В центре плода находится косточка с шершавой поверхностью. Активное плодоношение наблюдается со второй половины июля по август.

Слива интересно размножается, реже всего – черешками, чаще – семенами или прививкой. Плодовое дерево относят к гибридам. Прародителями сливы домашней являются алыча и терн.

Сливовые сухофрукты

Заготовка плодов сливы включает их консервацию или высушивание. Как раз во втором случае получается ценнейший продукт – чернослив, лечебные свойства которого соответствуют свежим плодам, собранным с древа. Сделать чернослив в домашних условиях не составит труда. Для этого требуется пройти через несколько этапов.

  • Сбор. Начинается со второй половины июля. Дожидаются полного созревания плодов. В Венгрии одноименный сорт сливы оставляют дозревать до тех пор, пока плоды массово не начнут опадать с дерева, что значительно ускоряет процесс приготовления чернослива. В случае дождливого лета желательно не затягивать со сбором урожая, поскольку в перезрелых плодах могут заводиться черви.
  • Обработка. Плоды промывают в холодной воде, до полного устранения загрязнений. Полностью смывать восковой налет нет необходимости. После мытья удаляют плодоножки. Для ускорения высыхания сливу бланшируют в кипятке на протяжении нескольких минут. После того как стечет вода, раскладывают на устланном противне в один слой.
  • Сушка. Для высушивания плодов можно использовать сушилки. В этом случае бланшировать сливу нет необходимости. В духовке ставят температуру около 50 °С, оставляют дверцу открытой. Оставляют плоды на несколько часов, на протяжении которых проверяют готовность продукта.
Свежий чернослив при желании можно избавить от косточек. Для этого достаточно воспользоваться ровной ручкой без стержня. Сушеный чернослив, уже полежавший некоторое время, от косточки освободить намного сложнее.

Состав заготовок

По химическому составу чернослив относят к самым насыщенным сухофруктам, что увеличивает его ценность в плане общего укрепления организма. Ценится он и в диетологии как средство, предотвращающее запоры и дополнительный источник быстрой энергии. Состав чернослива включает следующие соединения.

  • Сахаристые вещества. Сюда относят глюкозу, сахарозу, галактозу, а также полисахариды. Эти вещества легко усваиваются организмом, превращаются в энергию без дополнительных усилий. Содержание сахаров в плодах очень высоко, что обуславливает внушительные показатели калорийности конечного продукта.
  • Органические кислоты. Наибольшая доля принадлежит яблочной кислоте, также в сливах выявлены щавелевая, лимонная, уксусная кислоты. Они способны улучшать пищеварение, стимулируя синтез пищеварительных соков, оказывать легкое противомикробное действие, стимулировать выработку мочи и желчи.
  • Красящие вещества. Обладают антибактериальными, противоопухолевыми иммуностимулирующими и желчегонными свойствами. Способны активизировать и поддерживать на высоком уровне метаболические процессы.
  • Пектины. Действуют в просвете пищеварительного тракта в качестве сорбента, устраняют и предотвращают интоксикацию организма при различных отравлениях, впитывают и выводят радионуклиды, соли металлов, токсические продукты переработки пищи и деятельности микрофлоры.
  • Клетчатка. Очищает организм от шлаков и токсинов, действует в качестве мягкого слабительного, а также создает длительное чувство сытости после употребления чернослива.
  • Дубильные вещества. Выступают активными защитниками слизистых оболочек, поскольку образуют на них альбуминатную пленку, предотвращающая раздражающее механическое и химическое влияние. Обладают вяжущим действием, стимулируют регенерацию эпителия.
  • Нутриенты. Витаминный состав чернослива вмещает все самые необходимые для человеческого организма составляющие – полный набор витаминов группы В, каротиноиды, витамин Е, а также аскорбиновую и никотиновую кислоту. Это наделяет сухофрукт иммуностимулирующими и общеукрепляющими свойствами, а также способностью лечить и предотвращать соответствующие авитаминозы.
  • Минералы. В черносливе содержится много калия, необходимого для нормальной работы сердечной мышцы и поддержки стабильного уровня артериального давления. Сочетание кальция, магния и фосфора обеспечивает укрепление костной ткани и зубной эмали. Натрий, железо и кобальт улучшают кроветворение, способствуют повышению уровня гемоглобина. Нежелательно есть его при грудном вскармливании, поскольку на некоторые вещества для грудничка могут стать провокаторами сильных кишечных колик. С осторожностью следует употреблять чернослив:

  • при сахарном диабете;
  • людям, страдающим ожирением;
  • при нервных заболеваниях;
