Обычно свеклу воспринимают как пищевую культуру. Известны ее слабительные и гипотонические свойства, однако польза свеклы для здоровья состоит не только в этих качествах. Обладая большой поглощающей способностью, корнеплоды за один сезон настолько напитываются витаминами и минералами, что могут стать отличным общеукрепляющим средством для всей семьи. Употреблять свеклу в любом виде рекомендуют людям, проживающим в неблагоприятных экологических условиях, а также проходящим курсы химио- и радиоволновой терапии. Какие еще секреты таит этот, казалось бы, обыкновенный корнеплод?

Характеристика культуры

В Древнем Риме и Греции свекла была несколько негативным символом – обозначала склоки, сплетни и интриги. Ее преподносили рассорившимся людям, чтобы высмеять их, а венок, сплетенный из ботвы, вешали на видном месте у жилища склочника. По мере приобретения популярности свекольная символика стала связываться с любовью. В некоторых странах корнеплоды использовали в свадебных обрядах. На Руси любовь к культуре стала распространяться приблизительно с Х века. Тогда свекла была завезена на нашу территорию с Византии. Сейчас растение повсеместно культивируется в качестве пищевого и кормового, а особые углеводистые сорта – для производства сахара. Но до сих пор свекла встречается в дикой природе Ирана и Китая.

Ботанические признаки

Свекла относится к травянистым растениям семейства маревых. Культурная и дикая формы отличаются. Первая бывает многолетней и двулетней, имеет хорошо развитую подземную часть и мощную ботву. Дикорастущая свекла обладает тонким и слабым корнем, непригодным в пищу, слаборазвитой надземной частью. Чаще всего такая трава – однолетняя. Пригодная для лечения и приготовления еды свекла выглядит так.

  • Корни. Свекольный корнеплод может иметь различную форму, достигать внушительных размеров при благоприятных условиях произрастания. Поверхность его покрыта тонкой кожицей, а внутри находится сладкая и сочная мякоть. В ней хорошо видны кольца, образованные из уплотнений мякоти. Как правило, чем менее видны эти прожилки, тем больше пользы для здоровья несет корнеплод. Цвет варьируется от светло-розового, до пурпурно-бурого и сиренево-красного. На поверхности корнеплода могут быть тонкие боковые корешки. Большее их количество сосредоточено внизу – у окончания подземной части.
  • Листья. Культивируемая свекла имеет хорошо развитую надземную часть. В первый год вегетации она представлена только прикорневой розеткой, образованной из длинночерешковых листьев с крупной листовой пластиной овальной или яйцевидной формы, а также с цельным краем. На пластине хорошо просматривается жилкование. С нижней стороны пластины жилки имеют розовый или красноватый оттенок, как и длинные мясистые черешки. Во второй год развития растения можно увидеть стеблевые листья. Они мелкие, имеют ланцетную или вытянутую форму, расположены поочередно.
  • Стебли. Травянистый стебель вырастает из прикорневой розетки на второй год вегетации растения. Он имеет мясистую плотную структуру, активно ветвится кверху и выступает цветоносом. Поверхность стебля облиственная и покрыта бороздами. Она может деревенеть по мере взросления растения и созревания на нем плодов.
  • Цветки. Цветение свеклы непримечательны – небольшие метельчатые соцветия, состоят из мелких колосков. Цветки в них собраны максимум по пять штук, имеют зеленоватый или беловатый окрас. Соцветия выходят и пазух листьев, а также расположены на верхушке стебля. Околоцветник простой. Цветение растения выпадает на окончание июля и длится до средины августа.
  • Плоды. Начинают дозревать с окончания августа, процесс может затянуться до начала октября, при благоприятных климатических условиях. У свеклы необычные плоды, называемые клубочками. Они образованы несколькими сросшимися односемянными орешками.

Свекла обыкновенная является полиморфным видом. Выведено множество ее сортов, среди которых сахарные, кормовые и разноцветные – столовые. Огромной популярностью пользуется лиственный сорт свеклы, называемый мангольд.

Выращивание и заготовка

Свекла обыкновенная относится к довольно требовательным культивируемым растениям. Ей необходимо достаточное количество света, воздуха, влаги, питательных веществ в почве, а также правильная температура. При несоблюдении всех условий наблюдается тенденция к резкому снижению урожайности. Например, если высадить свеклу слишком рано, то расти начнут не корнеплоды с лиственными розетками, а сразу цветоносные стебли. Это происходит из-за сбоя двулетнего цикла культуры.

Существует несколько правил удачного взращивания, позволяющие сделать применение свеклы максимально полезным для здоровья.

  • Качество почвы. Растение очень любит хорошо дренируемые и воздухопроницаемые грунты. Лучше всего подходят суглинистые или с примесями песка. В крайнем случае подойдет глубокая пахота плотного чернозема, обеспечивающая рыхлость почвы. Нежелательно высаживать свеклу на том месте, где росли бобовые, кабачки и другие культуры, насыщающие почву азотом, поскольку корнеплоды втягивают нитраты с особой легкостью.
  • Время высадки. Посев проводят только после того, как почва прогреется до 10 °С. Если после посева наблюдается снижение температуры, грядку необходимо накрыть пленкой.
  • Место для свеклы. Чтобы в корнеплодах было достаточно витаминов и других биологически активных веществ, свекольную грядку размещают на участке, залитым солнечным светом.
  • Полив. Вкусовые и питательные качества свеклы зависят от достаточного содержания воды в корнеплоде. При засушливых условиях культуру следует обильно поливать.

В качестве лекарственного растительного сырья и пищевого продукта можно использовать свекольные корнеплоды, а также ботву. Корнеплоды разрешено высушивать, для получения свекольных чипсов. Однако вместе с влагой они теряют большинство полезных веществ. Свекла обладает отличной лежкостью, особенно – ее позднеспелые сорта. При этом сочная мякоть сохраняет полезные вещества вплоть до нового сезона. Рационально использовать в пищевых и лекарственных целях корнеплоды, хранящиеся в подвале. Правильно хранить свеклу в домашних условиях следующим образом.

  • Сбор.К заготовке свеклы приступают после увядания нижних листьев прикорневой розетки. Корнеплоды подкапывают лопатой, извлекают их из почвы, потянув за основание розетки. Аккуратно отряхивают от земли.
  • Подготовка.Перед организацией хранения свеклу необходимо подготовить. Корнеплоды освобождают от ботвы, отрезая ее у основания подземной части. Не стоит оставлять большие участки черешков, так как именно они выступают провокаторами загнивания. Свеклу высушивают в сухом прохладном месте, разложив на тканевом отрезе. После того как весь грунт высох, его вытирают тряпкой или мягкой щеткой. В процессе проверяют корнеплоды на твердость – местами мягковатые подлежат срочному употреблению.
  • Хранение.Корнеплоды укладывают рядами в деревянные или пластиковые ящики. Рыхло засыпают песком или древесными опилками. Второй вариант обеспечит лучшее проникновение воздуха. Для длительного сохранения в корнеплодах полезных веществ подходят подвалы с температурой до +4 °С, и влажностью от 60%.

Свекольную ботву чаще всего используют в свежем виде для кулинарных целей – готовят салаты и супы. Листья добавляют в бутыли при мариновании овощей. Черешки заготавливают на зиму в качестве солений. С ними готовят салаты.

Вкусовые качества черешков растения очень напоминают спаржу. При необходимости листья свеклы можно заготовить для лекарственных целей путем высушивания измельченных листовых пластин вместе с черешками. Сырье раскладывают на бумаге, поддон размещают в тени. Часто переворачивают, чтобы мясистые черешки не загнили.

Что содержит корень

Свекольные корнеплоды относят к диетическим продуктам. Практически 80% от общей массы составляет вода. Около 14% выпадает на долю различных сахаров. Аминокислоты содержатся в свекле в количестве 2% от общей массы, 1% отводится жестким растительным волокнам. Оставшаяся часть – кладезь полезных веществ, оказывающих на организм человека комплексное благотворное влияние. Среди них такие компоненты.

  • Витамины. Свекла богата витамином С, витаминами А и Е, никотиновой, фолиевой, пантотеновой кислотой, витаминами В1, В2, а также витамином Р. Такой набор обеспечивает свеклу общеукрепляющими и иммуностимулирующими способностями, а также положительным влиянием на состояние сосудистой системы. Комбинация аскорбиновой кислоты, биотина, ретинола и токоферола наделяет свеклу высокой антиоксидантной активностью. Витамины содержатся в свекле в сбалансированном количестве, поэтому положительные результаты употребления этого продукта проявляют себя первыми на состоянии кожи – через одну-две недели.
  • Минералы. Свекла напитывается ими из почвы с самого момента прорастания. Неудивительно, что в ней содержатся все необходимые макроэлементы (магний, калий, натрий, кальций, железо), а также микроэлементы, включая довольно редкие (кобальт, молибден, фтор, мышьяк, марганец, медь, хром, цинк, селен). Все вещества участвуют в обменных процессах и ферментативном синтезе, а потому необходимы организму для правильного функционирования.
  • Аминокислоты. Представлены глютаминовой кислотой, аспарагином, лизином, валином, гистидином. Используются организмом в процессах энергетического обмена и синтеза волокон различных тканей. Одной из важнейших аминокислот выступает бетаин – вещество, активизирующее обновление и восстановление клеток печени. Благодаря ему свекла имеет ярко выраженное гепатопротекторное действие.
  • Сапонины. Являются стимуляторами желчеобразования, выделения мочи, обладают мягким слабительным эффектом, а также стимулируют секрецию пищеварительных соков, положительно влияя на работу желудочно-кишечного тракта (ЖКТ).
  • Органические кислоты. Представлены лимонной, щавелевой и яблочной кислотами. Оказывают антимикробное действие, стимулируют обмен липидов в организме, в комбинации с сапонинами выводят солевые отложения из тканей.
  • Гликозиды. Им свекла обязана своим гипотензивным действием. Свекольные гликозиды обладают седативными свойствами, антихолестеринемическими, а также обезболивающими.
  • Пектины. Их в свекле содержится даже больше чем в яблоках. Именно благодаря пектинам свекла очищает организм от шлаков, токсинов, а кишечник – от продуктов гниения, вредных бактерий. Пектины свеклы настолько активны, что выводят из организма свинцовые соединения.
  • Антоцианы. Красящие вещества, обеспечивающие насыщенный цвет корнеплода и его сока, обладают антиоксидантными и противораковыми свойствами. Они не способны излечить злокачественные опухоли, зато оказывают явное содействие в этом процессе лекарственным препаратам, а также предупреждают появление атипичных структур в здоровом организме.

Лечебные свойства свеклы заключаются не только в корнеплодах. Надземная часть культуры содержит даже большее количество витаминов С и К, чем подземная. Также она богата растительными волокнами и хлорофиллом, обладающим антисептическими свойствами.

Характерно, что весь вред свеклы для здоровья заключается в составе нижней части черешков и верхней – корнеплода. В этих местах могут накапливаться токсичные продукты, азотистые вещества, пестициды и прочий «мусор». Именно поэтому как для лекарственных целей, так и для пищевых, от указанных частей необходимо избавляться.

Лечение свеклой в народной медицине чаще всего подразумевает употребление свекольного сока. Продукт этот имеет достаточно специфический вкус, требует осторожности в начале терапии и строгого соблюдения дозировок. Это спровоцировано повышенной концентрацией активных веществ и специфическим влиянием на организм. В начале применения сок разводят водой. Так поступают до тех пор, пока организм привыкнет к данному продукту. Из-за содержания тритерпеновых соединений, улетучивающихся на воздухе, народные целители советуют пить сок после того, как он постоит в холодильнике на протяжении двух-трех часов. Варианты применения выжимки из свеклы:

  • при мигрени – смешивают равные количества свекольного сока и меда, употребляют по столовой ложке трижды за сутки;
  • при рините – смешивают сок и мед, в пропорции 2:1, капают по паре капель в каждую ноздрю, раз в сутки;
  • при охриплости – орошают горло и миндалины кипяченым остывшим свекольным соком;
  • при кашле – принимают внутрь по четверти стакана сока, до четырех раз за сутки.

Последнюю схему приема свекольного сока можно считать стандартной, показанной при авитаминозе, малокровии, гипертонии. В случае плохой переносимости продукта народные целители рекомендуют выжимать сок из отварной свеклы, разводить его водой, употреблять в меньших количествах, но чаще.

Для замены свекольного сока можно есть сырую свеклу. Суточная дозировка для взрослого человека составляет 100 г. Для лучшего усвоения и более мягкого воздействия на организм рекомендуют измельчать свеклу на мелкой терке, смешивать с тертой морковью, зеленью и обязательно – с небольшим количеством оливкового масла.

В последнее время популярен рецепт свеклы с кефиром для похудения. На самом деле существует рецепт диеты на кефире и свекле: по килограмму каждого продукта на сутки, употребляют в произвольном порядке и виде, на протяжении трех дней. Согласно отзывам, такой подход позволяет избавиться от пары килограммов за счет очищения организма и относится к экстренным методам снижения веса.

Вареная свекла полезна своим мягким воздействием на организм. Употреблять ее для разнообразия рациона можно хоть каждый день. Если есть желание сохранить пользу корнеплода – его лучше запекать в духовке.
